Ingredients
- 1 cup caster sugar
- 1 3/4 cup flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 1/2 cup whole milk
- 1 cup strong coffee
- 4 fl. oz vegetable oil
- 1 tsp vanilla extract
- For Chocolate Buttercream:
- 3/4 cup unsalted butter softened
- 2 1/4 cups icing sugar
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 3 tbsp milk
Instructions
- Preheat the oven to 180*C/360*F
- In a large mixing bowl, add all of the dry ingredients.
- Mix the wet ingredients together in a bowl or large jug.
- Add the wet ingredients to the dry ingredients and mix thoroughly until completly combined.
- Pour the batter into non-absorbent disposable baking cups, two thirds full.
- Bake in the preheated oven for 20-25 mins or until tester comes out clean. Avoid opening the oven within the frist 15 mins.
- For Buttercream:
- Add the softened butter to a large bowl and mix until fluffy.
- Add the icing sugar, cocoa powder and salt to the butter and mix thoroughly to combine.
- Add the milk and vanilla extract and continue mixing to for a smooth uniform cream.
- Place the buttercream into a piping bag fitted with a large Wilton 1M nozzle.
- When the cups cakes have cooled. Pipe the buttercream over the top to fom a rose pattern.
