

Meatballs and Homemade Marinara Sauce

Ingredients
- 400 g pork and beef mince
- 2 tbsp fresh parsley (chopped)
- 1 tbsp fresh chives (chopped)
- 2 garlic cloves (crushed)
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/4 cup Parmesan cheese (finely grated)
- 2 tbsp plain flour
- For Homemade Marinara Sauce:
- 650 g cherry tomatoes
- 1 large white onion (finely chopped)
- 2 garlic cloves (chopped)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 12-16 fresh basil leaves
- 1 tsp paprika
Instructions
- Preheat the oven to 180C/350F.
- In a medium bowl add beef and pork mince, then parsley, chives, garlic.
- Mix all of the ingredients together using a spoon to combine, then add paprika, black pepper, cheese and flour.
- Mix all the ingredients together until there is no more flour or cheese clearly visible.
- Use a small ice cream scoop to help shape and divide the meat evenly.
- Shape each scoop of meat mixture into a ball by rolling in the palm of your hands.
- Place the meatballs on a lined or non-stick baking sheet.
- Bake in a preheated oven for 15 mins. Turn them after 10 mins.
- The meatballs will leak a bit of grease because of the pork. Remove out of the grease when turning a place on a dryer part of the sheet.
- Remove from the oven after 15 mins and place in a dish.
- For Homemade Marinara Sauce:
- Place tomatoes in a blender and liquify.
- Separate the liquid from the seeds and any pulp using a sieve. Place the sieve over a bowl to collect the liquid.
- Place a large saute pan over medium-high heat. Add olive oil and after 1 min, add the chopped onions and allow to soften for 3-5mins before adding the garlic.
- Saute the onions and garlic for a further 2 mins before adding in the tomato liquid.
- Stir gently to mix all of the ingredients together. Add salt, black pepper and paprika and stir again.
- Cover and allow to simmer for 20 mins. Stirring gently every 10 mins.
- After 20 mins, the sauce should thicken naturally. Add the meatballs and allow them to heat up in the sauce for about 2 mins.
- Add the basil leaves and mix into the sauce.
- Remove from the heat and serve.
