Instructions

1. Sift flour and set aside. Zest oranges by grating the rind on the fine side of a grater.
2. Prepare your baking pan by greasing and dusting with flour.
3. Preheat the oven to 165C/325-330F.
4. In a large mixing bowl, add the softened butter and caster sugar and cream for 5 mins.
5. Add eggs one at a time beating for 1 minute between each addition.
6. Beat the mixture for 2 mins after adding the last egg.
7. Add the sifted flour to the batter in two-three stages mixing thoroughly by hand after each addition.
8. Add the orange zest and juice to the batter and mix thoroughly.
9. Pour the batter into the prepared cake pan and hit the pan on the countertop to remove any air bubbles and level the mixture.
10. Place the pan in the preheated oven and bake for 50 mins.
11. Remove from the oven and lift the cake from the pan after 2-3 minutes.
12. For Glaze:
13. Pour the orange juice into a small pan and place it over medium to high heat.
14. Add the sugar to the orange juice and stir continually. The mixture will begin to bubble and should be ready in 5-6 minutes.
