In a small mixing bowl, add rosemary, paprika, black pepper, salt, crushed garlic, cayenne pepper and olive oil .
Mix all the ingredients to thoroughly combine.
Using a sharp knife make shallow cuts across the top of the meat and a few deep cuts on the meaty side of the lamb, making a criss-cross.
Put the seasoning mixture into all of the cuts.
Rub any remaining mixture over the entire leg.
Allow to marinate overnight.
Bake in a preheated oven at 180*C/360*F for 1hr 45 mins
Remove from oven when done and allow the meat to rest for at least 20 mins before carving.
Scrape any burnt seasoning from the top to reveal the beautiful golden brown leg underneath.
