Instructions

1. Crack the eggs into a large bowl or jug.
2. Add the lemon zest and beat the eggs with a hand or electric whisk until light and fluffy.
3. Add the evaporated milk and condensed milk and mix thoroughly.
4. Taste to ensure your desired sweetness. Add additional condensed milk if required.
5. Add Angostura bitters, nutmeg and rum and mix thoroughly.
6. Strain the mixture before bottling. (optional)
7. Serve over ice cubes or chilled. Enjoy
