Instructions

1. In a large bowl, add flour, yeast, baking powder and salt.
2. Use a fork or whisk to mix all of the dry ingredients.
3. Add the water a little at a time while using a fork to begin forming the dough.
4. Once all of the water has been used form the dough into a ball and transfer it onto a lightly floured surface and knead for 5 minutes.
5. NB: You can use a machine with a dough hook to knead the dough if available.
6. Sprinkle the bottom of the mixing bowl with a little flour and place the dough back in it.
7. Cover the bowl with a damp tea towel or a plastic wrap followed by a dry tea towel and leave for 30 minutes.
8. Cut the dough into equal quarters. Then cut each quarter into half.
9. Form each piece of dough into a ball by pinching and pulling all of the edges into the middle to form a ball.
10. Use a bit of dry flour to smooth and flatten the bottom of each dough ball.
11. Place the dough balls on a tray lined with greaseproof paper or a very lightly floured surface.
12. Cover with a damp tea towel and allow to rest for 20 minutes.
13. Place your tawa or non-stick frying pan over medium heat. On a scale of 1-14 place it on 10.
14. Roll out each ball into a 1/4 inch thick circle.
15. Place the rolled-out dough on the dry hot tawa or frying pan.
16. As the bubbles begin to appear, flip the roti over to begin cooking on the other side.
17. Continue cooking to allow the roti to cook evenly on both sides.
18. The roti should begin to fill with air from the steam building inside and puff up.
19. Tip: Your roti has a 95% chance of puffing up in the oven if you are having trouble on the stovetop. Follow the steps below for completing in the oven.
20. Preheat the oven to 180C/360F.
21. Use a pizza tray with holes at the bottom or the oven racks.
22. As your roti begins to form bubbles on both sides and cook. Transfer the roti from the tawa or frying pan to the oven.
23. Leave for 2-3 mins and they will puff up completely.
24. Complete the same steps for all of the dough balls until they are used up.
25. Sada roti can be enjoyed with breakfast fillings, at lunch or even at dinner time. They can be filled with cooked veggies, meat or even fish. Enjoy them with whatever you desire.
